Hidden Veggie Lentil Bolognese

Red lentils melt into this tomato sauce, so it tastes like a classic bolognese but is packed with plant protein, fiber and iron. Grated carrot and zucchini disappear completely, which makes it a great sauce for picky eaters.

Instructions

  1. Step 1: Finely chopped onion, grated carrot and grated zucchini softening in olive oil in a large pan

    1Soften the veggies

Heat the oil in a large pan over medium heat. Cook the onion, carrot and zucchini for 5 minutes until soft, then add the garlic for 1 minute.

  2. Step 2: Red lentils and crushed tomatoes being stirred into softened vegetables in a large pan

    2Add lentils and tomatoes

Stir in the lentils, tomatoes, water and oregano and bring to a simmer.

  3. Step 3: A thick red lentil bolognese sauce simmering in a pan with a wooden spoon

    3Simmer until thick

Simmer for 20โ€“25 minutes, stirring often, until the lentils are completely soft and the sauce is thick. Add a splash of water if it gets too dry.

  1. Step 4: Small whole wheat pasta shapes being drained in a colander over a sink

    4Cook the pasta

Meanwhile, cook the pasta in unsalted water until soft, then drain.

  2. Step 5: Small pasta shapes being tossed in a thick red lentil and tomato sauce in a pan

    5Toss together

Stir the pasta into the sauce, or spoon the sauce on top.

  3. Step 6: Small pasta shapes with thick red lentil bolognese sauce in a pastel blue toddler bowl with a toddler spoon on a pastel table, nothing else in the bowl

    6Serve

Cool slightly and serve. Set aside your toddler's portion before adding salt or Parmesan for the adults.
