Contains: milk.

Instructions

  1. Step 1: Two scrubbed russet potatoes being pricked with a fork on a baking tray on a pastel kitchen counter

    1Bake the potatoes

Heat the oven to 425°F (220°C). Prick the potatoes with a fork and bake for 45–50 minutes until soft all the way through.

  2. Step 2: Soft steamed broccoli florets being finely chopped on a pastel cutting board

    2Steam the broccoli

Steam the broccoli for 5–6 minutes until very soft, then chop it finely.

  3. Step 3: Baked potato halves being scooped out with a spoon into a bowl, leaving the potato skins as boats

    3Scoop out the middles

When the potatoes are cool enough to handle, cut them in half and scoop the insides into a bowl, leaving a thin layer in the skins.

  1. Step 4: Mashed potato being mixed with chopped green broccoli, shredded cheddar and yogurt in a mixing bowl

    4Mix the filling

Mash the potato with the butter, yogurt, broccoli and half the cheese.

  2. Step 5: Potato skin boats filled with cheesy broccoli mashed potato and topped with melted golden cheddar on a baking tray

    5Fill and bake again

Spoon the filling back into the skins, top with the rest of the cheese and bake for 10 minutes until the cheese melts.

  3. Step 6: Cheesy broccoli potato boats, one cut into strips, on a pastel green toddler plate with a toddler fork; only the potato boats on the plate, no carrots, no tomatoes, no other food

    6Cool and serve

Cool for 5 minutes. Serve whole for older toddlers or cut into strips.

How to serve by age

9–12 months

Scoop out the filling and serve it on a preloaded spoon, once dairy has been introduced. Skip the skin.

12–24 months

Cut the boats into strips. The skin is fine once it's soft from baking.

2–3 years

Serve a whole boat with a fork. Toddlers can help spoon the filling back into the skins.

Allergy & diet swaps

🌾 Gluten-free: Gluten-free as written. Potatoes, broccoli, cheese, yogurt and butter are naturally gluten-free; check your cheese and yogurt labels.

Dairy-free
Mash with olive oil and unsweetened soy milk instead of butter and yogurt, and skip the cheese.
Extra protein
Stir in shredded cooked chicken or mashed white beans.
Sweet potato
Use sweet potatoes and bake for 40–45 minutes.

Tips

  • Microwave shortcut: microwave the pricked potatoes for 8–10 minutes, turning halfway.

  • Younger toddlers can eat just the filling with a spoon.
